Quinoa Stuffed Tomatoes October 28 2014


 Try these delicious stuffed tomatoes as a healthy snack or to accompany fish.

 4 large tomatoes

 1 cup uncooked Quinoa

 1 small red onion

 4 crushed garlic cloves 

 2 cups vegetable broth

 Teaspoon of olive oil



 -Preheat the oven to 180C.

 -Cut of the top of the tomatoes and scoop the seeds and pulp out.

 -Combine the quinoa and vegetable broth in a saucepan and boil on medium heat for 15 minutes or until the  broth has been absorbed.

 -Saute the onion and garlic in a saucepan with the olive oil.

 -Add the onion and garlic to the Quinoa.

 -Place the Tomatoes on to a baking tray and season with salt and pepper.

 -Stuff the tomatoes with the Quinoa.

 -Bake the tomatoes for 12 minutes.

 -Now for the most important step, dig in!
