Super Eleven's Feel Good Rainbow Salad November 19 2014
Bring back the taste of summer with this delicious rainbow salad recipe!
-1/2 iceberg lettuce
-Handful cashew nuts
-1 red bell pepper
-1 yellow bell pepper
-2 red onions
-1 tbsp. chia seed
-¼ red cabbage
-1 tin drained sweet corn
-Reduced fat red pepper hummus
-1 large tomato
-1 can Red kidney beans
-1 teaspoon sea salt
-3 garlic cloves
-Shred the lettuce and cabbage and place it into a large bowl. (We like this one)
-Chop the peppers, onions, tomato and beetroot into small pieces and throw them into the bowl along with the kidney beans and sweet corn.
-Crush the garlic cloves and put them in the bowl, then squeeze the lemon on top.
-Pour the cashew nuts and the chia seeds into the bowl and mix everything together.
-Serve with a dollop of hummus on top!
