Super Healthy Vegan Brownies July 31 2015

 

 

It’s impossible to resist a gooey chocolate brownie, but what if we told you that you don’t have to? Thanks to this delicious black bean recipe, brownies can now be enjoyed guilt free!

 

These brownies are packed full of a range of healthy ingredients including Super eleven Shake, which contains 11 of the best Superfoods on the planet! It also contains Super Cocoa Powder and Super Flaxseed, which are both bursting with nutrition!

Ingredients:

-2 Scoops Super Eleven Shake (Available HERE)

-2 cups Black Beans, drained and rinsed

-1 tsp. Vanilla Extract

-2 tbsp. Almond milk

-1/2 cup Walnuts

-2 tbsp. Super Flaxseed (Available HERE)

-5 tbsp. Water

-1 cup Super Cocoa Powder (Available HERE)

- ¼ cup Maple Syrup

-1 tsp. Baking powder

-3 tbsp. Coconut Oil (Our favourite is VitaCoco, available HERE)

-1 Banana

-2 tbsp. Cocoa nibs

-Pinch of Salt

-1/3 cup Vegan Chocolate (optional)

 

Directions:

-Pre-heat your oven to 180 degrees Celsius.

-In a small bowl, mix the flaxseed and water together, then refrigerate.

-Combine the black beans, almond milk, banana and coconut oil in your food processor until smooth.

-Add the Super Eleven Shake, cocoa powder, maple syrup, baking powder, salt, vanilla extract and blend again.

-Remove the flax mixture from the refrigerator and add this to your brownie batter, blend for 20 more seconds.

-Mix the cocoa nibs and walnuts into the mixture and pour it into a lined baking tray.

-Bake for 25 minutes, then allow to cool.

-If using the vegan chocolate, melt in the microwave, stirring every 15 seconds, then drizzle on top of the brownies.
